Portobello Burger

Serves 2

Ingredients

2 large portobello mushroom caps

2 slices red onion

2 tbsp. vegetable oil

1/4 cup feta cheese

2 slices tomato

Lettuce

2 favorite burger buns

Salt and pepper to taste

 

Cooking Directions

  • Preheat grill to medium high.
  • Lightly brush mushrooms caps and onion slices with vegetable oil; season with salt and pepper.
  • Heat grill to medium high. Place mushroom caps, gill side up on the grill. After about 3 minutes, flip and cook another 2 to 3 minutes until the mushrooms are seared and cooked through.
  • Add buns face side down to grill to toast for 1 to 2 minutes.
  • To build your burger: Stack lettuce, tomato, mushroom, feta cheese and sliced onion.  Season to taste.
